Chocolate Eclair

Quick and Delicious Chocolate Eclair
1 box of instant french vanilla pudding mix.
1 16 oz. container of whipped topping.
1 box of original graham crackers.
1 12oz. container of chocolate icing.
In a bowl prepare instant pudding as directed on box, fold in
whipped topping.
Layer one layer of graham crackers in a 12 x 14 sized pan.
Add half of pudding mixture then repeat with graham crackers
until finished. Top layer should be graham crackers.
Then melt your chocolate icing in the microwave until thin.
Pour icing over top of graham crackers.
Refrigerate for at least 2 hours.

Spanakopita (Greek Spinach Pie)

Delicious Spanakopita

12- Sheet's of Phyllo Pastry.

Vegetable or olive oil cooking spray.

3- clove's of garlic-minced.

4-Tablespoons-olive oil.

40-ounces-Spinach frozen and chopped.

1 cup-Chopped Parsley--fresh.

4-Whole-Green Onion--finely chopped.

1 Teaspoon-Dried Dill Weed.

1/4 Teaspoon-Nutmeg.

1/2 Teaspoon-Salt.

1/2 Teaspoon- Pepper.

1 cup-Cottage Cheese.

2-Whole Egg whites.

4-ounces-Feta Cheese-Crumbled.

Thaw and drain the 4 10 oz. packages of spinach.

In a small bowl,Mince 2 clove's of garlic, add 4 Tablespoons of olive oil. Set aside.

To make the filling,squeeze the spinach between your hands to remove most of the liquid.

Place in a bowl or a food processor. Add the parsley,green onions,dill,nutmeg,salt,pepper,and the remaining 1 clove of garlic (minced).Stir in the cottage cheese,egg whites,and feta. Combine well. Lightly coat a 9 x 13 inch baking dish with cooking spray.

Lay one sheet's of phyllo in the bottom of the dish.Spray lightly with cooking spray and cover with another sheet of phyllo dough. Brush that sheet with the garlic-olive oil mixture.Layer a total of four sheets,coating each with oil mixture.Spread half the filling over the prepared phyllo dough.Lay another sheet of dough over the filling and coat lightly with oil mixture,repeat 4 times.Layer remaining spinach filling on dough.Continue layering phyllo over the filling,coating each sheet with oil.

When finished ,brush the surface with olive oil.

Preheat the oven to 325 degrees F. Bake for 40 Min. until golden.

HomeMade Guacamole Dip Recipe

2. med-large Avocado's.
16.ounces of Sour Cream.
Lemon Juice -1 teaspoon.
Garlic Salt- to taste.
Red Chili Pepper Flakes -to taste.
Salt- a pinch.
Direction:In a small Bowl, Cut and Remove seed's from avocados.Remove the meat. Mash the Avocados with a fork until there only slightly chunky.(or until it is at your desired consistency). Add Sour Cream and Lemon Juice, stir. Then add your seasonings (Garlic Salt,Pepper Flakes,Salt- to taste).
